Mario Vitale Stuffing

1 pound pork sausage well browned
2 cups fennel or celery
1 cup chestnuts
2 cups apples (box grated)
1/2 cup parsley
1 1/2 cup turkey stock
Stale bread cubes
Bake until moist on bottom and crunchy on top
45 minutes at 350 degrees
